Our white chocolate is made from cocoa butter which we extract from our cocoa beans. Since it is made from fine quality fresh cacao, there is no need to undergo the common commercial process of “deodorization”, which removes the inherent aromatic characteristics of the cacao. Again, we use brown butter for its notes of rich caramel, as well a native Brazilian spice called Cumaru, which lends notes of vanilla and cinnamon. This bar also features our pure roasted cacao nibs, which balance the sweetness of the white chocolate while also providing a satisfying crunch.
