Description Our favourite, and indeed the most famous white tea is Silver Needle White Tea (Bai Hao Yin Zhen). Silver Needle is the most prestigious type of white tea. Made from the young, tender buds of the tea plant (Camellia sinensis), it is renowned for its purity and subtlety. Each bud is hand-picked before it opens, in early spring, to preserve its delicate flavour. While white teas are often associated with Fujian Province, they also come from Yunnan Province, in the southwest of China, a region known for its tea history often referred to as the birthplace of tea. The region’s ancient tea trees, some over a thousand years old, contribute to its reputation for producing some of the finest teas in the world. Yunnan’s unique climate, with its misty mountains, abundant rainfall and fertile soil, creates ideal growing conditions for tea plants. The specific variety used for making Silver Needle white tea in Yunnan Province is mainly the Da Bai (Big White) tea tree. This organically produced tea takes its Chinese name from the tiny silvery-white hairs that cover the bud as it develops at the top of each tea shoot. Elegant in appearance and deliciously mouth filling, it also has a high polyphenol content.
