The rind pattern on Manchego honors a time when it was made by pressing the curd into baskets of native esparto grass. Manchego is the workhorse cheese of Spanish cuisine, with its mild, nutty characteristics; it is well suited as a sandwich topping or to be cubed up for snacking.
